Fresh Corn & Mango Salad
Serves 3-4
3 Ears Fresh
Corn
1 Mango,
Chopped8 Radishes, Sliced
½ Bunch Cilantro, Chopped
1 Jalapeno, Minced
3 Limes, Juiced & Zested
½ Cup Red Onion, Diced
1 ½ T Cider Vinegar
Shuck the
corn and rinse it under cold water, removing all of the husk strings. Rip off the stem, and with the stem side on
the cutting board, cut off the kernels. Add
the remaining ingredients and serve cold.
